Leave your base by 8:00 AM and drive 10-12 kilometres to Old Goa, a UNESCO World Heritage Site since 1986. The complex is best before 10 AM when light is soft and tour groups have not yet arrived. Most significant structures are within walking distance of each other, making this a rare Indian heritage site that rewards walkers over drivers.
Begin with the Basilica of Bom Jesus, built between 1594 and 1605. This is one of the oldest and most revered churches in Asia and houses the mortal remains of St. Francis Xavier, the 16th-century Jesuit missionary. The mummy is kept in an ornate silver casket in a glass-fronted reliquary elevated on a marble platform. The Baroque interior features gilded retablos and Portuguese-Indian artistic fusion in woodwork and stone. A side museum displays colonial-era documents and artwork.
Walk across the square to Se Cathedral, the largest church in Asia. Construction began in 1562 and took over 90 years to complete. Built in Portuguese Gothic style with an Italian Renaissance interior, the cathedral is known for its Golden Bell, the largest bell in Goa. The main altar depicts the life of St. Catherine of Alexandria in detailed painted panels. Allow at least 45 minutes here.
Adjacent to Se Cathedral is the Church of St. Francis of Assisi, now the Archaeological Museum of Goa. Inside is a gallery of tombstones of Portuguese nobility, colonial-era portraits, and pre-Portuguese Hindu sculptures. The floor is composed of original tombstones you walk directly over. The nearby Church of St. Cajetan (1655), modeled on St. Peter's Basilica in Rome, has a crypt with buried governors beneath the altar.
By midday, return toward Panaji for lunch. Try caldeirada (Portuguese-style fish stew) or chicken cafreal (herb-marinated grilled chicken). Drive along Miramar beach road for a brief cooling stop with a roadside coconut.
Evening: book a 45-minute Mandovi River cruise from Panaji jetty (GTDC boats). These include live Konkani folk dance performances and provide the city view from water. Return for a light dinner and early rest before South Goa tomorrow.
